Safety
Talking about safety of enzymes produced by fermentation, three aspects shall be taken into account:
- the safety of use by the consumer (consumer safety);
- the potential health hazard for the staff involved in the manufacturing and handling of the enzyme (occupational safety); and
- the potential risk to the environment (environmental safety)
